Ingredients
- 4 x 175g fish fillets
- 250g cherry tomatoes halved
- 2 tablespoons capers, rinsed and drained
- 100g pitted olives
- 1-2 tablespoons balsamic vinegar
- 2 tablespoons extra virgin olive oil
- 2 cups mixed salad leaves
Directions
- Preheat oven to 390F.
- Place fish in a roasting pan, scatter with the tomatoes, olives and capers, then drizzle with olive oil.
- Season with salt and pepper.
- Bake for 15 minutes.
- Remove pan from oven, cover with foil and leave it to rest for 5 minutes.
- Divide the fish, tomatoes, olives and capers among 4 plates.
- Stir the vinegar into the pan juices and spoon over the fish.
- Serve with salad leaves!
